The Deflorio family is the heart and soul of Villa Giade, where hospitality and dining are attended to in every detail.
It is a story of love and passion that guided Angelo and Irina Deflorio from St. Moritz, where they met, to Valchiavenna. Here, day by day, they brought their dream of hospitality and dining to life, which became Villa Giade and is now shared with their son and chef Gianluca.
Irina oversaw the renovation of the suites and has been dedicated to the gourmet restaurant’s dining room and guest reception with unwavering attention and professionalism since Villa Giade’s opening.
Angelo brings his Apulian roots and deep respect for the region to the restaurant’s culinary offerings, embracing Valtellina’s mountains and their riches alongside the creativity and new techniques of their son Gianluca.
Our Philosophy
Angelo and Gianluca represent the perfect union of traditions, local ingredients, and modern techniques.
On one side, there is Apulia with its wheat, leavening, vegetables, and a love for raw materials that find a perfect interpreter in Angelo.
On the other side is Valtellina, with its alpine pastures and dairy production, herbs, fruits, and meats, offering unique ingredients with which Gianluca can express his creativity.
After an experience in Berlin at 18, the young Deflorio returned to Villa Giade with the desire to apply a modern vision of cooking to the study and processing of ingredients, respecting their organoleptic characteristics to provide guests with the best taste experience.
Today, Villa Giade’s culinary offering is a journey of taste and smell through the flavors and aromas of Valchiavenna, lovingly narrated by Irina and her collaborators in the dining room.
