Angelo Deflorio, the patron of Villa Giade, blends his Apulian roots with the modern techniques of his son Gianluca, learned during a formative experience in Berlin that brought a Central European touch to the menu of a gourmet restaurant focused on textures, combinations, and elegant presentations.

The result is contemporary and delicious dishes featuring lake and river fish such as pike and trout, cheeses from Pian della Giustizia, and fine meats like wagyu, as well as local cuts and game.

There are also more Mediterranean offerings, especially in the use of seasonal vegetables and in first courses with stuffed pasta, semolina pasta, and risottos that highlight the full flavor and savoriness of Apulia.

The refinement of the presentation and the elegance of the combinations are narrated by the dining room, masterfully directed by Irina Deflorio – Angelo’s wife – and the perfect hostess. Guided by her advice and expertise, Villa Giade’s menu can be enhanced by a wine pairing journey featuring over 200 national and international labels.
